How to Cook Molokhia the Right Way
Molokhia is a famous traditional dish in Arabic cuisine, known for its rich taste and health benefits. To prepare molokhia properly, some important points need to be considered. Here's the correct way to prepare molokhia step by step:
Ingredients:
- 500 grams of frozen or fresh molokhia leaves
- 4 cloves of garlic, crushed
- 1 teaspoon of ground coriander
- 2 tablespoons of ghee or oil
- 4 cups of chicken or beef broth
- Salt and pepper to taste
- Lemon juice (optional)
- 2 chicken broth cubes (optional)
Method:
- Prepare the molokhia: If you’re using fresh molokhia, wash the leaves well and then crush them with your hands or in a molokhia grinder. If using frozen molokhia, open the package and let it thaw slightly.
- Prepare the broth: In a large pot, bring the chicken or beef broth to a boil, adding the chicken broth cubes if you want to enhance the flavor. Let the broth simmer gently.
- Prepare the garlic and coriander: In a pan, heat the ghee or oil over medium heat, then add the crushed garlic and ground coriander. Stir the mixture until the garlic turns golden and fragrant.
- Add the molokhia: Add the molokhia to the boiling broth and mix well. Cook it on low heat for about 10 minutes, stirring continuously. Make sure the molokhia doesn't boil too hard to maintain its soft consistency.
- Serving: Once the molokhia is ready, serve it in a dish with lemon juice if you wish to add a tangy flavor. It can be served with white rice or bread.
Notes:
- It is important to keep the molokhia smooth and homogeneous, so avoid overcooking it.
- You can add pieces of chicken or beef with the molokhia as desired.
